Soak raisins in warm water while preparing other ingredients.

Preheat oven to 375°F (higher temp for altitude).

Cream together softened coconut oil and coconut sugar until well combined (2-3 minutes).

Beat in egg, egg yolk, and vanilla extract.

In separate bowl, mix all dry ingredients (flours, oats, baking soda, spices, salt).

Add dry ingredients to wet mixture and stir until just combined.

Drain raisins well and fold in with walnuts.

Drop generous spoonfuls on parchment-lined baking sheet, flatten slightly.

Bake 10-12 minutes until edges are golden but centers still look slightly soft.

Cool on pan 5-10 minutes before transferring (they'll firm up as they cool)..
