Drain tuna thoroughly — press with a fork to remove as much liquid as possible. In a bowl, combine with binding agent (see variations), Dijon mustard, celery, green onions, lemon juice, salt, and pepper. Mix well and taste for seasoning.

Set oven to broil on high. Lay bread slices on a baking sheet. Toast lightly first — either in a toaster or under the broiler for 1–2 minutes per side — so it holds up under the tuna.

Divide tuna salad evenly over bread slices. Top each with a slice of sharp cheddar. Broil on the top rack for 2–3 minutes, watching closely, until cheese is melted and bubbling with a few golden spots.

Remove from oven and immediately layer on tomato slices and a generous handful of sprouts. Add cold sprouts after broiling — not before — to preserve crunch. Serve open-faced or press two halves together.
